Today, I’m excited to share a lunchtime meal that my host has prepared! In Colombia, lunch is typically the largest meal of the day, usually between midday and 2 PM. My host (and landlady), Ruth, often invites me to share meals with her and her husband when they are in town. She also enjoys teaching me how to prepare these dishes so that I can make them myself when they leave for work. I’ve picked up a few useful tricks from her during my stay!
Today, Ruth made pancetta (pork belly) with rice, beans, potatoes, and fried plantains topped with cheese! Pork is a staple in Colombian cuisine, often served with rice. Here in Boyacá (the state where I live), potatoes are commonly paired with meals as well. Red beans and fried plantains are key ingredients in many Colombian dishes. Interestingly, Colombians also enjoy adding cheese to various foods, even hot chocolate!
I have to say that Colombian meals are quite hearty, so you’re sure to feel full and satisfied afterward! As I mentioned, lunch is the main meal of the day, which means large portions. At the beginning of my time here, I often felt very sleepy after lunch because of this new diet. However, I’ve gradually gotten used to it over time.
