Yummy Gastronomy: the Treasures of Ecuador!

Hello, everyone! 

I hope you all had a wonderful week! Or in Spanish, espero que hayan tenido una bonita semana! So much has happened this past week in Ecuador. During the third and fourth of March, the holiday of Carnival is celebrated here in Ecuador! Carnival is a four day holiday right before Ash Wednesday. Carnival is celebrated all over in Latin America, but it is celebrated differently in each place. For example, in Ecuador, there are parades and people “play carnival,” which involves throwing colored powder, water, eggs, flour, dirt and a special foam called carioca. It is so much fun! 

In Ambato, there are two festivals for Carnival, the normal carnival and the festival of the fruits and flowers (la festival de las frutas y las flores). The festival features a large parade and a beautiful exposition of locally sourced flowers. The whole city gets involved! I had a wonderful time watching it this year, plus I am super proud because some of my students danced in the parade!

This week, though, I wanted to answer the question that all of you asked me: “What do people eat in Ecuador?”

Ecuador has many typical and traditional dishes that are not only unique to the country but to the regions and cities, too.
