Rica Comida!

Lastly, I went to a restuarant called "The Magic Bean", also in Quito and ate with my peers. In that restaurant, I had a dish that had crispy chicken rolls filled with vegetables and cheese. Around the chicken was a sauce that they called "napolian sauce". It was salty! There also was some white rice and a small salad on the side. 

How did I feel when I tried it?:

I was not nervous to try the soup at all. I actually was very excited to try it. My mom actually cooks locro at home, which is a dish that consists of potato and squash with cheese, so I was familar with this soup. My peers and I tried it together.

How is the food prepared?:

The sopa de locro basically consists of boiling popatoes with butter until they become really soft. Then you crush the potato so that it becomes like mashed potato. Then you add other ingredients like onions, salt, garlic, oil, and some spices. Then once the potato is mashed, you add water and milk and make it into a soup. Later, you add cilantro, little blocks of white cheese, and a slice of avocado. 

Is this food connected to the local environment? How?:

I feel like half of the restaurants around the city are very much influenced by the United States. There are a lot of restaurant branches like Kentuky Fried Chicken, McDonald's, and Burger King. There are also other places that have American food choices, like mac and cheese, MANY French fries, and hamburgers. But I think that some of the restaurants actually are authentic and sell Ecuadorian cuisine, such as the place we went to that had the soup and chicken! It was a hidden, small restaurant, but it surely had delicious food!
