Cochinita is a pulled pork dish cooked with achiote paste, orange juice, lime juice and other spices. Traditionally, it is cooked underground for many hours and served with pickled onions. You can find cochinita in tacos, tortas or just with a side of tortillas.
Cochinita is made from local produce including limes and oranges. Also, it is traditionally cooked in an underground-type barbecue where the meat can incorporate different flavors.
