I tried a couple of different parts of the process. I took the cooked rice sheets and placed them on the drying racks and cut the dried sheets into noodles. It was so interesting to see how they are made, especially because I didn’t know much about this type of noodle before coming to Vietnam.

It seems like each new region I travel to in Vietnam has its own specialty food or drink. Dóng Tháp is known for its lotus seeds. People turn the seeds into a type of milk that is similar to almond or soy milk. I tried it when I was there, and it tasted very rich and sweet!
