Ceviche con Pollo is the Way to Go!

Vast lands of farms provide the chicken needed for ceviche de pollo and seafood from the Pacific Ocean provides ceviche de pescado. Fields of trees are also used to grow typical plantain side dishes for ceviche. I think that it tastes best with some patacones, sliced, hot and fried plantain patties.
