Local Dishes

I immediately wanted to know how to cook this for my family in California. It reminded me of Thai food because it had a lot of noodles and vegetables. Thankfully, I found a friend who taught me how to make it.

Initially, I ate jollof rice and kelewele a lot because it was sold everywhere. After about a week of eating the same foods almost every day, I started to venture out and try different foods. The sauce this dish is served with is called shito and I think it was too spicy for me to handle. My stomach hurt from eating it because a lot of the spices were different than what I am used to eating back home. Even though I am no longer able to eat it, I think it is a well-made meal that can fill someone up when they are hungry.

While my stomach was trying to adjust, I would eat waakye and gari. This was much easier on my stomach because it was not made with many spices. I like to get this often because it is similar the food I eat back home and is very popular here, much like jollof.

About a month after being here, my Ghanaian friend introduced me to red-red. It is not spicy, but still very flavorful. There is always a long line to order red-red because it is another very well-known dish, but it is always worth the wait.

How is the food prepared?:

Indomie is prepared by adding dry noodles into boiling water, stir-frying vegetables, making a scrambled egg and combining them all. Then you must add the prepackaged spice mix. It is simple and quick to make after a long day of studying.

Jollof rice is made with white rice mixed with tomato sauce, pepper, chilis and topped with shito sauce. Shito sauce is made from a fish-based sauce that is made with a lot of chili powder.
