It is not actually a soup, but rather a moist, soft bread. The history of the dish is that years ago, a chef was cooking soup for the leader of Paragauy and his guest. However, the cook forgot about the dish and left it on the stove for too long! When he came back, he found that it had become almost like bread, but he did not have time to make anything else. Because of this, he served the food to the guest and explained that it was the only solid soup in the world. And luckily the guest loved the food! Since then, Paraguayans have been eating sopa paraguaya, and it is served at all major events and parties. The main ingredients in this dish as corn flour, cheese, and milk. I have had types with onions, too.
Another similar food is called chipa guazu, which looks similar to sopa paraguaya. It is also looks like bread, but it has bigger pieces of corn in it. You can think of popcorn kernals from the United States. Chipa gauzu uses similar types of corn pieces that have been broken into smaller bits and cooked to be softer. This recipe has more cheese, eggs, milk than sopa paragauya.
At first, eating this dish made me think that I was eating cornbread. But once I bit into it more, I could tell that both sopa paraguaya and the chipa gauzu were very different than cornbread. Cornbread in the United States is sweeter than both of these dishes. These dishes have much more cheese in them and are often softer than cornbread. I also found that I do not need to eat that much sopa paraguaya or chipa gauzu because they make you feel full very quickly!
