Sushi and Tradition in a Single Bite

Japanese sushi rice is often a short-grain rice variation that has been cultivated for years and varies depending on the region and climate in which the rice is grown, with some regions specializing in certain rice used for sushi based on taste and texture! Many of the fish types used in sushi dishes are also caught and harvested locally by fishermen and fishing boats, depending on which region they're located in. For example, towns and cities located closer to the ocean are more likely to use saltwater fish local to make their sushi, while towns located closer toward the mainland or closer to freshwater bodies are more likely to use freshwater fish such as eel!
