If you put food on a tortilla, it is a taco.
If you fry a taco in hot oil, it is a taco dorado.
If you cover a taco in salsa, it is an enchilada.
If you put cheese inside a tortilla, it is a quesadilla.
If you cover a tortilla in beans, it is an enfrijolada.
If you cut up a tortilla into small pieces, fry them, and cover them in salsa and cheese, it is chilaquiles.
The tortilla is a staple in Mexican cuisine. I've eaten Mexican food my whole life because my family is Mexican, but since being in Puebla I have tried so many new foods. I tried chilaquiles for the very first time in Mexico City.
Before coming to Puebla, I considered myself a picky eater. However, I made it my goal this semester to try as many different dishes as possible. I have surprised myself and eaten food I would have never eaten before. My mom has made chilaquiles at home but I always have refused to eat them. When I saw chilaquiles on the menu in Mexico, I knew I had to try them!
