Hummus in the Holy City

How did I feel when I tried it?:

I adore hummus. I eat it every day and do not think I will ever be sick of it. I have yet to be disappointed by a hummus I have tried here, and am so thankful I can eat this incredible food whenever I feel like it. Some hummus is significantly better than others, but the quality of the ingredients, and the care put into it and its making is quite clear. I also typically share my hummus adventures with my friends, which always makes eating new foods so much more fun. I have been loving my hummus taste-testing adventures and look forward to trying even more brands and styles in the coming months! 

How is the food prepared?:

Hummus is a staple in the Middle East, and many Israelis argue that the best hummus is Israeli hummus. Hummus is made by blending cooked chickpeas/garbanzo beans with tahini, lemon, salt, pepper and other spices or flavorings, including garlic, roasted bell pepper and more. Each restaurant and brand makes hummus completely different from the next, but Israeli hummus is always so much better than any hummus I have ever found in the United States. The flavor completely changes depending on the kind of tahini that is used, how much oil is added, and even how well the chickpeas are cooked! 

Is this food connected to the local environment? How?:

The best part about Israel's food is that nearly all of the ingredients are local. With Israel's lack of allies in the surrounding Middle East region, the country has had to work hard to develop its personal agriculture and agricultural technologies so that it can provide food for its people, rather than relying on importing food from other countries.
