Eating Vegetarian in Morocco

Introduction:

Since most restaurants in the United States have a lot of meat-based dishes on their menus, being a vegetarian means that I have limited food options. Vegetarian and vegan restaurunts are becoming more popular, though, as more people choose to go meat-free.

Morocco is totally different. Whether at the school cafeteria, in restaurants or at home, meat comes first. I haven't found any vegetarian or vegan restaurants yet. So what was I to do? Should I keep being a vegetarian or become a meat eater again for only this semester? 

Luckily, I found a traditional Moroccan meal that was vegetarian friendly: tagine!

What food did I try?:

The dish that I tried is known as a tagine. Tagine is a soup/stew cooked in two ways: either with vegetables and meat or with just vegetables. Guess which version I tried?

How did I feel when I tried it?:

Whether you order the vegetables and meat or just the straight-veggie tagine, eating a tagine creates a burst of flavors and spices on your taste buds. With every bite, you take in years of Moroccan history that has shaped and developed the tagine. I felt a high level of joy when I ate all of my tagine.

How is the food prepared?:

Tagines are prepared using a tagine. Confusing right? Well, "tagine" has two different meanings. A tagine is a meal, but it is also the cookware used to cook the meal.
