In my opinion, homemade is always better.
Start by frying some bacon. You only need about one piece per person. Once the bacon is fried, you can break it into small pieces.
To make the dumplings, first you peel and boil potatoes (about one per person). Once the potatos are done boiling, you grate them. This way they become mushy, almost like baby food. Once this is done, you mix in a tiny bit of milk. Then it's time for the hardest part. With a spoon, you push down on the potato mixture to get all of the extra water at the top, so you can take it out. After adding a pinch of salt, you start adding flour to the potatos until it becomes a sticky dough. Boil another pot of water, and find a partner to help you with this next part. One person should put the potato mixture through a strainer with larger holes over the pot of water, so it enters the boiling water as little dough balls. The second person should keep mixing the dough balls already in the water, so none of them stick together. After the last one enters the water, wait about two minutes. Once all of the dough balls have moved near the top of the water, you can take them out and put them in a separate bowl. Now you have the dumplings.
Then add one cup of bryndza cheese to the dumplings. In the United States, you will not find bryndza cheese. Instead, you can mix together cream cheese, sour cream, and feta cheese in equal amounts. This will give you a similar taste to bryndza cheese. Top with the bacon pieces. There you have it! Brynzdove halušky. Dobru chut (Eat up)!
